Select, deselect and sync routes with an Ambit3 Peak

I can’t see how one selects and deselects My Routes using the IoS App and then synchronises a new choice of routes with the Ambit 3. The Ambit3 Peak is limited to 100 Waypoints, so the number of routes with waypoints that can be stored on the watch is limited.
