I had GPS issues in the water (lake + sea) in summer. Suunto advises to wait a few minutes before start until a better GPS performance is available (assuming for more satellites to be found + SNR).
In my Garmin ‘Etrex-10’ there is a screen that shows the available & finally connected satellites.
In the watch it could be somehow a value of the quality of the GPS signal (yes this is somehow very abstract) or something like the Debug GPS screen
It would be helpful to get an idea when GPS is ready to start the training or better wait until the signal gets better.
Of course this could be helpful in any activity, not only swimming!
Maybe this can also be part of the navigation screen in sport mode, to check the quality of signal.
