Can anyone tell me if with SUUNTO Ambit 3 peak you can use the “ghost runner” challenging a previously recorded track?

No.
But what you can do, is set up a “ghost” running at constant pace as an app, there’s a set of those - http://www.movescount.com/apps#sorting=15&category=7

If you browse though apps section, I you might find few more advanced approaches as well.
